VINIFICATION / MATURATION
The grapes are harvested by hand and kept apart based on the location of the vineyard and the variety of the vine. In spring, the blending takes place of the various wines, thereby creating a unique, base sparkling wine to which is added to a very precise quantity of cane sugar and selected yeast. The bottling follows and then the wine begins to become frothy, with the consequent conversion by the yeast of the sugar into alcohol and carbon dioxide, ageing in the bottle for 18 months. In this way, the wine become sparkling. Remuage follows to put the yeast in suspension. Finally, to expel the sediment, disgorging takes place along with the addition of the “liqueur d’expédition”.
SENSORY CHARACTERISTICS
Colour : Straw yellow
Perlage: Plenty of soft foam, finely grained bubbles, lively and persistent.
Aroma: Intense and complex, of mature fruit and bread crusts.
Taste: Soft, full, persistent and well-balanced.
Accompaniment: Ideal as an aperitif, suitable for “important” meals, especially fish-based and delicate dishes.
Serving temperature: 6/8° C.
